HSC Food Technology syllabusmodules explained

Food Technology studies the Australian food industry and the science behind what it makes: how food is manufactured, preserved, packaged and sold, and how what people eat affects their health. The HSC rewards students who apply industry and nutrition knowledge to unfamiliar scenarios, naming real organisations, products and processes instead of writing in generalities.

NESA Food Technology Stage 6 Syllabus (amended 2009, updated 2013)

The written examination is worth 100 marks across four sections. Section I is twenty one-mark multiple-choice questions drawn from the whole course. Section II is short answer, worth 50 marks over questions 21 to 26, with items ranging from roughly five to eleven marks and usually split into parts. Section III is a 15-mark extended response, typically a case study built around a stimulus scenario. Section IV is a 15-mark essay-style question. NESA publishes marking guidelines for each paper.

Past papers on this subject span more than one syllabus. Papers written under an older one still work as practice, but the modules they test have changed — the index labels every paper with the syllabus it was set under.

The modules, one by one

Each area below lists the concepts named in the syllabus, what the NESA exam asks of them, and the mistake that most often costs marks.

Area 1 of 4

The Australian Food Industry

This area maps the industry itself: the agriculture and fisheries, food processing and manufacturing, food service and catering, and food retail sectors, and how a product moves between them. You study levels of operation and mechanisation, from household production through small business to large companies and multinationals, along with research and development, quality assurance, and the consumer influences pushing companies toward value-added foods. Emerging technologies sit here too, including biotechnology and genetically modified foods and ecologically sustainable production such as organic farming. The impact strand asks you to weigh effects on the environment (waste management, packaging, production techniques, transport), the economy (profit, employment) and society (lifestyle change, careers, working conditions, gender issues). Policy and legislation completes the picture, covering advisory groups and government requirements, particularly labelling law.

What the exam asks

Multiple-choice items test sector classification, level of operation and which legislation applies to a workplace scenario. Short and extended answers require a named organisation you have studied — its research and development activity, its response to changing consumer lifestyles, its economic impact — and often ask how two sectors have responded to a trend such as demand for plant-based foods.

Where marks go missing

Answering about the food industry in general when the question names an organisation you have studied. Without a specific company, product and dated example, a response settles into the lower bands however fluent the general discussion sounds.

Food Manufacture

Food Manufacture is the technical core of the course. Production and processing covers quality and quantity control of raw materials, the function of food additives, equipment characteristics, and production systems from small-scale and manual through to automated and computerised. Quality management brings in HACCP, critical control points, work health and safety, hygiene, and the identification of food safety hazards and risks. Preservation is the heaviest strand: why food is preserved, what causes deterioration and spoilage (environmental, enzymatic and microbial), the preservation principles of temperature control, moisture restriction, exclusion of air and pH manipulation, and the processes built on them — canning, drying, pasteurising, freezing and fermenting. Packaging, storage and distribution closes the area, covering packaging materials and current developments such as active packaging, modified atmosphere packaging and sous vide.

What the exam asks

This area supplies many of the higher-mark short answers. Questions ask you to explain the causes of a specific spoilage problem such as bulging cans, describe quality management procedures used in commercial production, or compare temperature control against another preservation principle. Multiple-choice items test additive functions, packaging types and oxygen-absorbing systems.

Where marks go missing

Confusing preservation principles with preservation processes. Freezing is a process; temperature control is the principle behind it. When a question asks you to compare principles, an answer that sets canning against freezing has not compared what was asked for.

Food Product Development

This area follows a product from idea to shelf. You analyse the factors shaping development: the external macro-environment of economic, political, ecological and technological conditions, and the internal micro-environment of personnel expertise, production facilities, financial position and company image, usually organised through a SWOT analysis. You classify the reasons for and types of development — market, consumer, societal, technological and profitability drivers producing line extensions, me-toos and new-to-world products. The development steps are examinable in detail: design brief, idea generation and screening, market research, product specifications, feasibility study, production process development, and prototype development and testing through sensory evaluation, consumer testing, packaging tests and storage trials. Marketing plans then cover the four Ps of product planning, price structure, place and distribution, and the promotional program.

What the exam asks

Multiple-choice items place an example inside a SWOT category or name a pricing strategy from a scenario. Longer responses supply a new product — a gluten-free sourdough, a native-ingredient ice cream — and ask you to identify and justify a target market, propose a marketing plan, or work through the development steps. The justification carries most of the marks.

Where marks go missing

Listing the four Ps without attaching them to the product in the stimulus. A marketing plan must name that product's price positioning, its distribution channels and its promotion; generic definitions of product, price, place and promotion earn almost nothing.

Contemporary Nutrition Issues

This area connects diet to health outcomes and to industry behaviour. Diet and health in Australia covers the physical effects and economic costs of malnutrition, both under- and over-nutrition, diet-related disorders, nutritional considerations for specific groups, and the roles individuals, community groups, the food industry, government and private agencies play in promoting health. Nutritionally modified foods deals with functional and fortified foods created to meet consumer demand, while active non-nutrients and supplements covers phytochemicals, probiotics, fibre and the place of supplements alongside a balanced diet. Influences on nutritional status ties it together: diet's role in obesity, diabetes and cardiovascular disease, food sensitivity, intolerance and allergy, and the lifestyle, cultural, social and media factors, including ethical issues in food advertising, that shape what people actually eat.

What the exam asks

This area supplies large short-answer items and frequently the Section IV essay. You may be asked to justify modifications to a supplied meal plan for a named at-risk group, outline a health-promotion strategy, discuss the role of dietary supplements, or write an extended response on how lifestyle, culture and social practices affect nutritional status.

Where marks go missing

Naming a target group and then never using its actual nutritional needs. A response about adolescents that never mentions iron, calcium or energy requirements is describing a demographic rather than answering a nutrition question, and cannot justify the modifications it proposes.

Common questions

Which syllabus does HSC Food Technology use?

The Food Technology Stage 6 syllabus, amended in 2009 with minor updates in 2013, governs the HSC course, and NESA has not replaced it. That means every exam paper from the past decade sits under the same syllabus with the same four-section structure. The junior Food Technology 7–10 syllabus is a separate document and does not apply.

How is the HSC Food Technology exam structured?

One written paper of 100 marks: twenty multiple-choice questions worth 20 marks, a short-answer section worth 50 marks across questions 21 to 26, a 15-mark extended-response case study, and a 15-mark essay-style question. The final two questions carry 30 marks between them and are where most band separation happens.

Do I need to memorise specific food companies for the exam?

Yes. Questions on the Australian Food Industry regularly require a named organisation and details of its research and development, economic impact or response to changing consumer lifestyles. Prepare two or three organisations from different sectors in enough depth to write a six- to nine-mark answer about each without hesitating.

Is the food product I develop at school examined?

Not directly, but the process behind it is. Your practical development work is assessed through school-based tasks, while the written paper gives you an unfamiliar product scenario and asks you to apply the same steps — design brief, screening, prototype testing, marketing plan. Drawing on your own project as evidence is fine when it genuinely fits the scenario.
