QCAA Food & Nutrition 2025 General Senior Syllabus (v1.2/v1.3, for cohorts completing in 2026 and beyond; the original 2019 v1.1 syllabus was examined from 2020 to 2025)
Food & Nutrition is assessed through internal assessments completed at school across Units 3 and 4, plus a QCAA external assessment built only on Unit 3 and Unit 4 subject matter. The external assessment uses a combination-response examination format: QCAA issues a stimulus book containing the product, formulation and market material you must work from, together with a separate question and response book you write in. Items run from short responses to extended responses. A marking guide with sample responses and an annual subject report are published alongside each year's papers.
Past papers on this subject span more than one syllabus. Papers written under an older one still work as practice, but the units and topics they test have changed — the index labels every paper with the syllabus it was set under.

The units and topics, one by one
Each area below lists the concepts named in the syllabus, what the QCAA exam asks of them, and the mistake that most often costs marks.
Area 1 of 5
Unit 1: Food science of vitamins, minerals and protein
This unit builds the chemistry you need before you can talk sensibly about a food product. You look at vitamins by solubility, fat-soluble against water-soluble, and at how heat, light, oxygen and leaching during processing destroy them, then at minerals such as calcium, iron and sodium, their bioavailability and the structural jobs they do in a formulation. Protein-based food gets the most attention: denaturation, coagulation, gelation, foaming, enzymatic browning and the Maillard reaction, and how each shows up as a texture, colour or flavour change you can actually taste. Alongside the chemistry you learn sensory profiling, building descriptors for appearance, aroma, flavour, texture and mouthfeel and running panels that produce comparable data, and the food safety side: the conditions micro-organisms need, how spoilage differs from pathogenic contamination, and the preservation techniques that interrupt both.

What the exam asks
Unit 1 is not examined externally, because the examination draws only on Units 3 and 4. It is assessed internally, and it is the vocabulary bank for everything later: protein denaturation, sensory descriptors and spoilage mechanisms all reappear inside Unit 3 and Unit 4 exam items, so shaky Unit 1 chemistry surfaces as vague exam explanations.
Where marks go missing
Naming a property without finishing the sentence. Writing that a protein denatures earns little; the marks sit in what that does to the food, the coagulated set, the firmer bite, the browned crust a marker can picture.

Unit 2: Food drivers and emerging trends
Unit 2 turns from the laboratory to the market. Consumer food drivers are the reasons people actually buy: health and wellbeing, convenience, cost, cultural and religious practice, ethics and sustainability. Emerging trends are how those drivers show up commercially, in plant-based proteins, functional and fortified foods and clean-label reformulation. You revisit sensory profiling as a market tool rather than a laboratory exercise, using panel data to decide whether a prototype matches what a target consumer expects. Food labelling requirements bring in the Australian food standards framework: the nutrition information panel, ingredient lists and percentage labelling, allergen declaration, date marking, country of origin, and the difference between a nutrition content claim and a health claim. All of it feeds the development of food formulations, where a described consumer need becomes an actual recipe and process.

What the exam asks
Like Unit 1, Unit 2 sits outside the examination's Unit 3 and Unit 4 scope and is covered by internal assessment. Its value at exam time is the market lens. Unit 4 items constantly ask who a food solution is for, and labelling rules and consumer drivers give you the precise language to answer that.

Listing consumer drivers generically instead of tying them to the specific consumer group in front of you. Consumers want convenience is a truism; naming the group, their constraint and the product feature that answers it is the marked response.

Unit 3: Food science of carbohydrate and fat
Unit 3 is the food science half of the externally assessed pair. Carbohydrate-based food covers gelatinisation and the way starch granules swell and set, dextrinisation, caramelisation, crystallisation and its control in confectionery, and the retrogradation and syneresis that make a sauce weep or bread go stale. Fat-based food covers melting point and plasticity, shortening and aeration in baked products, emulsification and the role of an emulsifier in holding a dispersed system together, smoke point, and both hydrolytic and oxidative rancidity. You then link these to sensory properties, explaining why a given reaction produces a specific mouthfeel, crumb, gloss or off-flavour. The unit closes on food safety, preservation techniques and spoilage as they apply to these products, working through water activity, pH, temperature control, packaging and the shelf-life consequences of each.

What the exam asks
This is examinable content. Expect stimulus describing a real product or process, with short response items asking you to describe or explain a named property, then longer items asking why an observed defect occurred and what change of ingredient or process would fix it. Responses that trace cause to effect in the correct order collect the marks.
Where marks go missing
Confusing the reactions that look similar: caramelisation with Maillard browning, hydrolytic with oxidative rancidity, gelatinisation with retrogradation. Markers spot it instantly, and the wrong mechanism invalidates every sentence of explanation built on top of it.

Unit 4: Food solution development for nutrition consumer markets
Unit 4 is where the science becomes a product decision. You start by investigating a problem for a nutrition consumer market, identifying the group, their nutritional need and the gap in what is currently available, then develop food solutions that improve safety, nutrition, transparency or accessibility. Food safety, preservation and spoilage prevention return with a specific focus on fat-based products, where rancidity, packaging and storage dictate shelf life. Formulation and reformulation processes are the technical core: changing an ingredient to reduce sodium, added sugar or saturated fat, and predicting what that substitution does to structure, sensory profile and safety. Finally you weigh the wider impacts and implications of a solution, from cost, sustainability and supply through to cultural acceptability and whether the intended consumer will actually eat it.

What the exam asks
The extended response items live here. You are given stimulus about a market and a product, asked to analyse it, then to make and justify a decision, usually a reformulation, using evidence from the stimulus and food science drawn from Unit 3. Recommendations with no stated consequence for safety, nutrition or sensory quality read as opinion.
Where marks go missing
Reformulating on nutrition alone. Cutting the sugar or the saturated fat is easy to propose and easy to mark down when the response never says what that removal costs in texture, preservation or shelf life, or how it will be compensated for.

External assessment focus (Units 3 & 4)
The external assessment is a combination-response examination restricted to Unit 3 and Unit 4 subject matter. QCAA issues a stimulus book containing the material you must work from, typically product information, formulations, labels and consumer or market data, and a separate question and response book you write in. Items range from short responses testing a single food science concept to extended responses that ask you to work through an unfamiliar scenario and commit to a recommendation. The command word in front of each item does real work, because describe, explain, analyse, evaluate and justify each set a different bar. The marking guide and sample responses QCAA publishes afterwards, together with the annual subject report, show how examiners separated responses that applied the stimulus from responses that only summarised it.

What the exam asks
Every item is anchored to the stimulus. Short responses want a named property or process applied accurately to the supplied product; extended responses want analysis followed by a justified decision, with evidence taken from the stimulus rather than recalled from the products you happened to study at school.
Where marks go missing
Answering from memory instead of from the stimulus book. A response explaining how emulsification works in general, without touching the actual formulation supplied, forfeits the application marks even when the underlying science is faultless.
