Use an organised sequence and separate equipment so ready-to-eat preparation does not overlap with raw-poultry work. Prepare and protect the fillings, move them to appropriate storage, then use the bench for raw preparation with the designated tools. Before returning the area to ready-to-eat work, remove raw residues and clean and sanitise the bench and relevant equipment using the approved procedure.
Workers must wash and dry hands and change contaminated protective clothing or gloves as required at the task transition. Check shared handles, containers and utensils as well as the visible bench. These controls interrupt transfer of microorganisms from the raw product to food that will not receive a later cooking step.
Marking guide: Award up to 4 marks: organised separation or sequencing; correct clean-and-sanitise changeover; personal/equipment transition control; explanation connecting these actions to the raw-to-ready-to-eat contamination route.
